Ingredients
Carrot Cake Whoopie Pie

  • 1 box carrot cake mix
  • 1/2 cup water
  • 1/2 cup oil
  • 1/2 cup flour
  • 3 eggs

Cream Cheese Frosting

  • 8 ounces cream cheese softened
  • 1/4 cup butter softened
  • 3 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees.  Line 2 baking sheets with parchment paper.
  2. Add cake mix, water, oil, flour, and eggs into a mixing bowl.  Stir until combined.
  3. Use an ice cream scooper to measure out each whoopie pie half.  You will have 20 halves, making 10 whoopie pies.  They will spread a little, so keep at least an inch between each one.
  4. Bake for 9-10 minutes.  Let it cool on the baking sheet for 3-5 minutes before moving to a cooling rack.  Let cool completely.
